How can I manage Folder Watches, i.e. re-order/sort and delete them? I have quite a few and managing them is becoming tricky.

To disable folder watches, right click on a folder and select 'Folder Watches', then un-check the checkboxes next to watch names. Watches are always sorted by name - to reorder them, change the name of the associated filters.

I realised the user account wasn't an administrator; couldn't see the filter switch.
